    Natural Springs + Pancakes

    It's back to nature again today at a park favorited by John James Audubon before you start your drive south to Miami.

    De León Springs State Park

    In 1831, naturalist John James Audubon visited what is now De Leon Springs State Park and noted in his journal, “This spring presents a circular basin, having a diameter of about 60 feet, from the center of which the water is thrown up with great force, although it does not rise to a height of more than a few inches above the general level.”
    Before then, the Mayaca Indians called this area Acuera, or “healing waters.”
    Both Audubon’s and the Mayacas’ observations still ring true today: the park is a wonderful place to spend time outside with five miles of hiking trails and its refreshing 72-degree natural spring waters to cool off afterwards.

    Old Spanish Sugar Mill

    Before leaving De Leon Springs State Park, enjoy a late breakfast or early lunch, or maybe even brunch, at The Old Spanish Sugar Mill Grill that’s housed inside a 100-year-old replica of the original 1830s sugar mill.

    George LeStrange Preserve

    A bit further down the road, stop at George LeStrange Preserve west of Fort Pierce to stretch your legs on the one-mile interpretive trail that winds through pine flatwoods, palm hammocks, and a floodplain forest. Another trail skirts the lake if you'd like to spend more time.

    After a full day of outdoor fun and driving back to Miami, a light dinner is probably in store for tonight. On your way back into the city, swing by The Cocinita Miami for a quick and healthy vegan meal.
